Autumn’s best apple dishes, sweets and drinks

Apples are ripe and ready for picking just as the temperatures begin to drop and we crave comfort foods like a slice of warm apple pie topped with vanilla ice cream, or a cup of mulled apple cider. “Apples really come into their own in fall; they have that snap and crispness that are a welcome change from summer fruits,” says Caitlin Mateo, executive chef at Square 1682 at the Hotel Palomar in Philadelphia.

The tartness of many apple varieties also make them well-suited to savory recipes, such as Mateo’s Skuna Bay Salmon with pickled green apples and an autumn green salad with apple vinaigrette.

“It’s all about balance, and depends on what types of apples you choose,” Mateo says. “You don’t want too many sweet elements in a savory dish, but when you do it right, the flavors really pop.”
