Creating a Food Art Experience with Guests
By Brian Frakes, Executive Chef, The Pfister Hotel For good or for bad, the days of us (chefs) being the yelling, cursing guy behind the curtain are behind us. Guests want to know us, have our email address, be able to call us with questions, and tell their friends they know us. I frankly enjoy this. It feeds the part of me that never was able to be a front-of-house person. Guests are seeking more and more interaction with us and the food we present. They like to know what inspires us, what inside tricks we might have, and how to become a better cook. Being in a high-profile culinary position at Milwaukee’s Pfister Hotel, I understand that our responsibility to the customer can also be an opportunity to engage and interact on a more personable level.
We as a culinary team are always looking for ways to interact with our guests and recently launched the Pfister #foodart Experience. Designed as an experience specifically for intimate VIP parties, team building events or corporate retreats, the #foodart Experience combines food styling and gourmet dining with social media.
#Foodart is about guests learning to plate and style food with the chef, and then being challenged to create their own food art masterpiece. To make it fun and easy to share, photos are taken of their final dishes, which are then emailed to guests while they eat. This is an important way of encouraging them to share and help us promote on social media. The food styling lesson, paired with the professional photograph of their creation, provides guests with an impressive image to share with their social communities—not to mention, an interactive dining experience they’ll never forget!
This one-on-one interaction between the chef and the customer allows guests to learn about the art of food, while also utilizing their creative juices and having fun!

Grand Geneva hosting Spring Classic golf tourney On Sunday, May 31, Grand Geneva Resort & Spa will host its inaugural Spring Golf Classic Tournament where foursomes will gather and compete in an 18-hole tournament on the award-winning Brute golf course for a chance to win one of many coveted prizes. The Golf Classic starts with registration and lunch at 12:30 p.m. followed by a 1:30 p.m. shotgun kickoff, and ends with a reception and awards ceremony. The tournament can be entered in either a scramble or a best ball division. |

THE PFISTER® HOTEL ANNOUNCES POP-UP GALLERY Current Artist-in-Residence Todd Mrozinski teams with former Artist-in-Residence Timothy Westbrook on clothing-themed exhibit The historic Pfister® Hotel, which is owned and managed by Marcus® Hotels & Resorts, has announced a new pop-up art gallery in its recently vacated retail space, formerly Boutique B’Lou. For the first exhibit, now open to the public, current Artist-in-Residence, painter Todd Mrozinski has teamed with former Artist-in-Residence, fiber artist Timothy Westbrook on a clothing-themed exhibit, “Biography of a Stitch.” In a space formerly adorned with clothing, the artists will present wearable art and painted portraits of everyday garments. “With the space being a former clothing boutique, Timothy’s woven work and my painted clothing series, both of which incorporate reused garments, seemed like the perfect inaugural show,” explained Mrozinski. “All of the clothing that was painted in this show was secondhand and well worn by my family and friends. The paintings are symbolic portraits of these people through their clothing.” “As a former Artist in Residence here, it’s an honor to be back at The Pfister showing my work at a place that has such meaning for me,” added Westbrook. “Collecting materials from the urban landscape, I am rescuing and adopting these abandoned memories to reincarnate them into elegant wearables.” A public opening reception for “Biography of a Stitch” will be held on Friday, June 12, 2015, from 6:00 – 10:00 p.m. Musical entertainers, Nineteen Thirteen, featuring Janet Schiff and Victor DeLorenzo, the founding drummer of Violent Femmes, will play from 7:00 – 9:00 p.m. Guests will enjoy complimentary snacks and a cash bar. “As we search for new and exciting retailers for the space previously occupied by Boutique B’Lou, we starting thinking about different ways we could utilize the space temporarily,” said Tim Smith, general manager of The Pfister Hotel. “With the hotel’s tradition of supporting the arts, it just made sense to give local artists a chance to showcase work they may not have otherwise had the opportunity to bring to the public.” Westbrook will be working in the pop-up gallery space as a guest artist from now until June 17, 2015. Grand Geneva offering special rates for golfing Brute and Highlands This Memorial Day weekend, spend some time in the sunshine and take advantage of special rates at Grand Geneva Resort & Spa’s golf courses. Both The Brute and The Highlands will be offering an $89 rate from Saturday, May 23 through Monday, May 25.
