Kil@wat Introduces New Dinner Menu

Milwaukee, Wis., Sept. 27, 2013 – Kil@wat restaurant, located inside InterContinental® Milwaukee, which is owned and managed by Marcus® Hotels & Resorts, today will begin offering a new dinner menu. The hotel’s classically trained executive chef, Robert “Bob” Druschitz, who has been leading the culinary team since February 2013, headed the reinvention of the menu.

While popular dishes, like Spicy Tuna Tartar, Mushroom Pappardelle, and Chocolate Cubed, remain on Kil@wat’s dinner menu, Druschitz has developed a number of new, exciting dishes for the menu. The Seared Diver Scallop & Pork Belly Duo, Seared Salmon Tournedo, and Pear Cake are all brand new additions.

Chef Druschitz has placed an increased emphasis on making the restaurant’s specialty ingredients in-house, aiming to have as much control over the quality of his ingredients as possible. To achieve this, the culinary team will prepare brown sugar-cured Wisconsin pork belly using the traditional, time-intensive method for a variety of dishes and make Ricotta cheese from whole Wisconsin milk to top the Roasted Beet Salad. In addition to whipping up a decadent chicken liver mousse for the Charcuterie plate, Druschitz’s team is also preparing polenta from Wisconsin-grown corn.

“I wanted to take Kil@wat’s already excellent menu to the next level,” said Druschitz. “Between the innovative new dishes and freshly made ingredients, we hope to keep our regular guests coming back, while attracting diners who haven’t been in to visit us in a while.”

As Milwaukee enters theater season, the Kil@wat team has refocused on efficiency and has increased its amount of prep work to cater to its many pre-theater diners.

“We’ve reevaluated some of our processes to ensure we can serve our theater diners an unforgettable meal, while keeping in mind their full schedules,” explained Druschitz. “We think they’ll appreciate both the amount of detail in our dishes, along with our efficient, professional service.”

French-trained and with nearly 15 years of culinary experience, Chef Druschitz has specialized in menu development, and has experience catering to the theater crowd from his time spent in Chicago at the Lyric Opera and Rhapsody.

“Not only has Bob brought to our team extensive experience working in high-volume restaurants, but he’s also familiar with serving the pre- and post-theater crowds—something we see a lot of here at the hotel,” said Tim Smith, general manager of InterContinental Milwaukee. “This inventive new menu reflects his expertise working with our discerning clientele.”

Kil@wat is located at Kilbourn and Water, inside InterContinental Milwaukee, directly across from the Marcus Center for the Performing Arts.
