Reality TV star Shannon Aikau, star of “Counting Cars” – the spin-off of History’s “Pawn Stars” – will sign posters in the Monarch Lounge on Friday, August 31 from 5-7 p.m. “Counting Cars” chronicles the daily activities at the Las Vegas-based automobile restoration and customization company, Count’s Kustoms, owned by Danny “The Count” Koker. Aikau, the motorcycle shop manager and engineer at Count’s Kustoms, is the go-to authority on bikes and has worked on bikes for over a decade. In celebration of Aikau’s Hawaiian roots, the hotel will offer guests poke bowls ($11), and all cocktails will be half off from 4-7 p.m.

On Saturday, September 1, the Hilton Milwaukee will also host an intimate Q&A breakfast with Aikau from 8-9:30 a.m. Fans can enjoy a Hawaiian-themed breakfast buffet while asking some of their most pressing questions to the motorcycle expert. The event is $25 (per person) plus tax and gratuity and space is limited. Featured menu items include:

New Sales Leadership Strengthens Marcus® Hotels & Resorts Group Book Efforts

Mason Street Grill’s new Chef’s Counter to Celebrate the Diverse Culinary Traditions of Restaurant’s Staff Members

No matter where you are in the world, food can bring diverse people and interests together around one table. That is the focus behind Mason Street Grill’s new Chef’s Counter experience – Eating Global in the Neighborhood. Rotating every eight weeks, the Chef’s Counter at Mason Street Grill, part of the Marcus® Restaurants Group, will feature unique dishes celebrating the diverse culinary traditions of the restaurant’s staff.

The first Chef’s Counter menu is now available and features:

Appetizer: Tuna kilawin ($19) with coconut, lime, red onion, pickled red chili and cilantro – This dish comes from Brian Pascua, line cook intern, who is from the Philippines.
Entrée: Pan-fried trout ($38) with ginger, lemongrass, tomato, mint and dill – This dish is from line cook Chris Xiong and highlights his Laos/Hmong heritage.
Side: Fasolakia ($8), which includes green beans, tomato, oregano, lemon and extra virgin olive oil – This dish comes from cocktail server Christina Manolatos, who is from Greece.
Dessert: Tres leches cake ($9) with Rumchata whipped cream – This dish is from line cook Christian Garcia-Cortez and celebrates his Mexican heritage.

Local Walking Tour Owner Named Next Pfister Hotel Narrator-in-Residence

The historic AAA Four-Diamond Pfister® Hotel, owned and managed by Marcus® Hotels & Resorts, today announced Anna Lardinois, owner of Walking Milwaukee self-guided walking tours, as its 11th Pfister Narrator-in-Residence. With a deep-seeded appreciation and passion for Milwaukee’s history, Lardinois will share her experiences at the hotel and interactions with guests via The Pfister’s award-winning blog (blog.thepfisterhotel.com) and ongoing literary events. New this year, Lardinois also plans to begin quarterly walking tours and podcasts about The Pfister Hotel.

“The Pfister Narrator program is a natural fit. I have long admired Milwaukee’s history and downtown’s gorgeous architecture. To have the opportunity to share stories from one of our city’s premier, iconic downtown hotels will be an invaluable experience,” said Lardinois. “I have spent years helping to bring the city to life through my work with Milwaukee walking tours. A Pewaukee native, Lardinois began her literary career as a high school English teacher for the School District of Waukesha. She taught at Waukesha West High School and IQ Academies of Wisconsin for 12 years. In 2012, while still teaching, she created Milwaukee’s popular Gothic Milwaukee walking tour, which showcases premier historic sites around the city. Three years later, Lardinois’ love of Milwaukee’s history and architecture led her to found Walking Milwaukee, a collection of self-guided walking tours of the city. She quickly made walking tours her full-time career and has since created a GPS-based, self-guided walking tour of Wisconsin Avenue to complement her other tours. Since starting Gothic Milwaukee and Walking Milwaukee, Lardinois has helped introduce Milwaukee’s history to thousands of visiting tourists. Her Gothic Milwaukee tour was named “Best Milwaukee Tour” by the Shepherd Express in its 2017 “Best of Milwaukee” list.

Milwaukee ChopHouse Announces New Chef de Cuisine and Menu

The Milwaukee ChopHouse, part of Marcus Restaurant Group, announced today that Calum Hastreiter has been promoted from culinary supervisor to chef de cuisine. In his new role, Hastreiter will oversee daily operations of the Milwaukee ChopHouse, located at the Hilton Milwaukee City Center in downtown Milwaukee. The restaurant also announced today that it has launched a new dinner menu, Hastreiter’s first as chef of the Milwaukee ChopHouse.

Hastreiter takes on his new position as chef de cuisine following six years working in various roles at the Milwaukee ChopHouse and Miller Time Pub & Grill, also located at the Hilton Milwaukee City Center. Prior to joining Marcus Restaurant Group, Hastreiter worked at Stonefly Brewery, a brewpub formerly located in Milwaukee’s Riverwest neighborhood. He served in several roles during his time with the brewpub, moving his way up the ranks to become kitchen manager in 2010. A Manitowoc, Wisconsin native, Hastreiter received a bachelor’s degree in history and political science from the University of Wisconsin-Milwaukee.

“During the past six years working at the Milwaukee ChopHouse and Miller Time Pub & Grill, I have been able to develop my culinary voice. I have had the great opportunity to build creative menus using seasonal and local ingredients for our regular wine dinners and learn about the restaurant’s classic dishes,” said Hastreiter. “Now, as chef de cuisine at the restaurant, I’m excited to showcase dishes and ingredients that I think represent me best as a chef and that our guests will thoroughly enjoy.”

In early March, Chef Haistreiter introduced his first dinner menu for the Milwaukee ChopHouse. The new menu features prime cuts, classic to the Milwaukee ChopHouse, in addition to an increased focus on seafood offerings. Two dishes of special note, as well as a few thoughts from Chef Hastreiter, include:

Mero sea bass ($42) with lemon beurre blanc, celeriac-apple slaw and micro herbs – “I’m most proud of this dish. We make a point to bring in fish from sustainably caught sources. When you have quality fish, it is best to let it speak for itself, which is my take on this dish. The simple accent flavors add to, but do not overpower, the buttery flavor of this great fish.”
Butternut squash bisque ($9) with pumpkin seed oil, paprika pepitas and fried sage – “One of my favorite things to make is soup. It’s simple, easy to do, and usually healthy. That is why the butternut squash bisque best represents me as a chef. This soup takes a simple ingredient, butternut squash, and elevates the flavors with a few added ingredients. I make soups at home nearly every week and am happy to be able to share something I love with others.”

Over the past year, the Milwaukee ChopHouse has worked to create a dining experience outside the expectations of a traditional chophouse. The restaurant received its first Wine Spectator Award of Excellence in 2017, which recognized its more than 150 wines available to guests. The restaurant also began hosting regular wine dinners featuring several courses of specially-prepared dishes paired with select wines from top vineyards and wineries across the United States, and unveiled seasonal menus featuring trendy cuts of meat, such as the bistro filet and braised pork cheek. The most recent and sold-out wine dinner, held March 9, featured exclusive selections from northern California-based Michael David Winery. While trying five wines from this 150-year-old winery, guests enjoyed five courses, which included:
• King Crab ravioli with charred fennel, Belgioioso ricotta, chive and blood orange beurre blanc, as well as
• A Vadouvan lamb chop with black lentil dal, charred purple cauliflower, pomegranate yogurt and preserved lemon.

The Pfister® Hotel Names Stephanie Schultz as Next Artist in Residence


Program is celebrating 10th year of promoting the works of local artists

The historic AAA Four Diamond Pfister® Hotel, owned and managed by Marcus® Hotels & Resorts, today announced Stephanie Schultz has been selected as the hotel’s next Artist in Residence. As the program celebrates its 10th anniversary, Schultz, a Milwaukee-area fashion designer, will work in the hotel’s lobby-level Artist’s Studio for one year beginning April 1, 2018. She is succeeding current Pfister Artist in Residence and tintype photographer, Margaret Muza.

“I am thrilled to be the next Artist in Residence as The Pfister celebrates the program’s 10th anniversary. It will be an honor to share my enthusiasm for fashion design with a community that I love,” said Schultz. “What I value above all else is learning through experience, and my time in this residency will certainly teach me a lot. I tell stories with my garments, specializing in historically-inspired couture, and what I learn through my emotions and inspiration is channeled into the fabric. As The Pfister Hotel’s next Artist in Residence, I cannot wait to use this opportunity to share my work with a broader audience and create truly unique pieces inspired by the 125-year history of this iconic hotel.”

Schultz’s work is often inspired by antique art and architecture, making The Pfister Hotel a perfect fit for her next collection. As an artist, she is no stranger to exploring new styles and designs. Her work has transitioned from counter-culture streetwear to couture and avant-garde. In 2005, Schultz began her fashion label, Silversark, as a way to bring Japanese street fashion to a Western audience. Recently, she has experimented with fashion elements from the Tudor-era through the Roaring ’20s, and translated them into contemporary designs. Through her passion and dedication for fashion design, Schultz has unveiled a number of different lines and collections under Silversark.

As part of her residency and as an homage to The Pfister Hotel’s invaluable Victorian art collection, Schultz will spend her yearlong residency designing a 16- to 20-piece fashion line inspired by the subjects in the hotel’s expansive art collection. This will include photographing, compositing and printing replicas of select hotel paintings on fabric to create one-of-a-kind wearable art. Her residency will culminate in a fashion show, presenting the full collection in The Pfister Hotel’s Imperial Ballroom. The final piece of her collection will serve as a Legacy Piece for the hotel, which will go on permanent display in the property.

Schultz was one of six finalists included in a four-week public voting period. In addition to the public vote via Facebook and in-person ballots, a selection committee, consisting of leaders in the local arts community, made the final decision in choosing the next Artist in Residence.

For the third time in the history of the Artist-in-Residence program, Schultz was also selected as the winner of the public vote. The public vote winner typically receives the opportunity to display his or her work in a solo exhibit at Gallerie M inside the InterContinental Milwaukee, also owned and managed by Marcus Hotels & Resorts. Because Schultz was also selected as the winner of the public vote, the public vote runner-up, Alice Wilson, a local living statue performer and costume artist, will receive the honor to showcase her work at Gallerie M this year. Both artists will receive a $300 gift certificate to Utrecht Art Supply, located in Milwaukee’s Historic Third Ward. All finalists from this year and years past will be offered additional opportunities to show their work at future Pfister-sponsored events.
